Bruschetta Chicken is BY FAR one of my favorite dishes. I mean, you can’t make a bad dish by combining tomatoes, basil, and cheese, right? But finding the perfect bruschetta chicken recipe can be a challenge. It’s such a popular dish, and there are SO many recipes out there claiming to be the best! I’ve tried way too many, but this one from my friend, Christy, is by far my favorite! I like to serve it with some creamy mashed potatoes and roasted veggies for a scrumptious, healthy meal! Enjoy!Bruschetta ChickenIngredients:
½ Cup flour
2 eggs, lightly beaten
3-4 chicken breasts
¼ Cup parmesan cheese
¼ Cup bread crumbs
1 Tablespoon butter, melted
3 roma tomatoes, seeded and chopped
3 Tablespoons minced fresh basil
1 clove minced garlic
1 T olive oil
1/2 tsp salt
1/4 tsp pepperDirections:
Preheat oven to 375°F. Place flour and eggs in separate shallow bowls. Dip chicken in flour, then in eggs. Place in a greased 13x9x2 baking dish. Combine the cheese, bread crumbs, and butter; sprinkle over chicken. Bake, covered, for 20 minutes. Uncover and bake 5-10 minutes longer or until top is browned. Meanwhile, in a bowl, combine the remaining ingredients and spoon over chicken. Return to the over for 3-5 minutes or until tomato mixture is heated through. Mmmmmmmm Mmm Mmm Mmm!Now for the side dishes!Creamy Mashed PotatoesIngredients:
2 teaspoons salt
2 large potatoes (Russet or gold)
1 Tablespoon butter, melted
½ Cup milk, warmed
salt and pepper to taste
chicken broth to coverDirections:
Peel and cube potatoes. Boil in salted chicken broth until tender, about 15-20 minutes. Drain, then mash. Add butter, cream, salt and pepper. Note: The key to dreamily creamy mashed potatoes is adding WARM butter and WARM milk, and not over-mixing. Trust me. Try it ,Variations
Add your choice of the following to please your taste buds: 1/2 C shredded cheddar cheese, 2 garlic gloves, minced (minced then sautéed in a little olive oil would be even better, but who wants to dirty up a pan for 2 garlic cloves?), or 1/4 C sour cream.
Note: This recipe is supposedly for 2 people so plan accordingly of your family! It makes approximately 4 servings (which is a little bit more than enough for myself, my husband, and our little guy). Sometimes we have leftovers ,Parmesan Broiled AsparagusIngredients:
1 bunch of fresh asparagus (or one 10 oz frozen package, thawed)
2 Tablespoons lemon juice
1/2 C shredded parmesan cheese (The kind you find in the refrigerator section NOT the kind in the green plastic container)
1 teaspoon freeze dried chives
½ teaspoon TexJoy (optional “secret” family ingredient)
Salt and Pepper to tasteDirections:
Preheat oven to Broil on High. Place asparagus in single layer on foil-lined baking sheet. (The foil isn’t absolutely necessary, but it sure makes clean-up easier!). Drizzle lemon juice over asparagus then sprinkle cheese and spices over the top. Broil for 10-15 minutes or until asparagus has lightly browned, turning once halfway through.
