They say invention is born out of necessity, and when you dish out big bucks for a thick, tasty steak, it’s a necessity that it be cooked right. At least that was the reasoning George Stephen adopted in 1952. The father of 12 didn’t indulge in steaks very often, but when he did, he preferred the flavor that came with grilling it. However, the open-air grills of the day left his food vulnerable to the elements, especially wind blowing ash or foreign particles onto it.

At the time, Stephen built metal buoys for the Weber Brothers Metal Works in Chicago, and one day, it dawned on him that the buoys’ unique dome-like shape would be perfect for a covered barbecue grill. Weber converted one of those buoys into a grill with grates, vents, and handles. He brought it home to test, and sure enough, the cover kept out the elements and his steak cooked just right.

Neighbors, friends, and family were equally impressed with his results and placed orders for their own covered grills. That was the beginnings of the iconic Weber dome grill.

This model offers all the convenience of gas grills with some of the flavor enhancement of traditional charcoal though the Weber Flavorizer bars. As juices drip from meat, the liquid gets vaporized into delicious smoke that settles onto the food. Three stainless steel burners put out 32,000 BTUs per hour. A warming rack lets cooks use the indirect-heat method while a primary cooking area of more than 400 square inches is large enough to hold plenty of chicken pieces, for example. Side shelves enable cooks to do on-site prepping.

If you’re an occasional griller who doesn’t need a fully equipped outdoor kitchen, consider this compact design. Two burners provide plenty of heat and 360 square inches of cooking surfaces accommodate a bounty of burgers, steaks, chicken, and chops. A center-mounted thermometer in the porcelain-enameled lid helps you keep an eye on the grill’s internal temperature. If you’re cramped on storage space, just fold down the two side tables, and when it’s time to grill again, open them up for extra room to groove.

Here’s an updated version of Weber’s old-school charcoal grill. First, it’s housed in a steel cart so you have plenty of prepping space, and a bottom rack offers extra storage, including a weather-protected charcoal bin. The Char-Basket holds the bricks while an electronic gas ignition system safely fires them up. When it’s time to clean, just engage the One-Touch clean system”blades in the base of the kettle direct ashes into a grate below. The grate also functions as a bottom vent.

It looks like a traditional Weber grill and has all the best features of the older models, but this design is elevated ever so slightly to make the experience a bit easier for cooks. For example, it has the tried-and-true kettle shape with a plated steel cooking grate, steel charcoal grate, and rust-resistant damper, but it also features the One-Touch cleaning system (no more shoveling out ashes).
