Broccoli & Pine-Nut Soup
This delicious soup is light and filling.
Perfect for lunch or a side to dinner.

Ingredients:
1 onion, diced
olive oil cooking spray
3 cups broccoli
3 cups chicken or vegetable stock
1/4 cup pine-nuts
Directions:
Fry onion in large skillet with olive oil cooking spray. Heat until lightly browned. Add broccoli and stock and simmer for 10-15 minutes until broccoli has softened. Let cool slightly and place in a food processor until smooth. Heat to serve with pine-nuts as a topping.
