Hello foodie friends, and Happy SaturDay! I hope you get to enjoy the day off and take advantage of the nice weather that is hitting Portland right now. And if you’re not in Portland, I just hope you’re not on the east coast with the snow right now! This past weekend I decided to treat myself to some special Blackberry Pancakes.
In truth, I was going to make these pancakes on Friday, and I ended up burning them and I almost made , but I wanted to give them another shot because pancakes deserve a real post! I also want to mention before we get started that while I used berries, you can absolutely use whatever kind of berry or fruit you want; I was just craving blackberry something.
(side note: I have a really terrible story involving holiday pancakes that my dad’s ex-wife made that were essentially just flour and water, they were terrible and I’m still a little traumatized. I LOVE pancakes, and was so disturbed by the utter lack of disrespect.)
INGREDIENTS
1 1/2 cup flour
1/2 cup brown sugar
2 teaspoon baking soda
2 large eggs
1 cup sour cream
1 1/2 cup blackberries (or other fruit), puréed
1/4 cup butter, melted
2 teaspoon vanilla
1/2 cup milk
WHIP IT UP
In a large mixing bowl, combine all dry ingredients. Whisk together.
In another bowl, combine blackberries, sour cream, eggs, butter and vanilla. Mix until well combined.
As you can see the mix will take on the color of the blackberries really well.
Slowly pour the wet ingredient bowl into the dry ingredient bowl while mixing. I had the KitchenAid running on a two while mixing this together. You’ll notice that the batter is pasty. Pour in the milk into the bowl and continue mixing for three minutes. The batter will loosen up and will be perfect for pouring onto the griddle.
Cook the pancakes at about 275˚ for three minutes on each side. You’ll know the pancakes are ready to flip when the edges start bubbling up and you have a few bubbles in the center of the pancakes. When you flip it, the edges will be a nice golden brown.
The finished product is a light and fluffy pancake with an amazing purple-ish color. The blackberries gave these pancakes amazing flavor and with just a bit of syrup or whip cream you’ll be set!
